About Peak Spirits
CapRock Organic Gin is among the best spirits produced in Colorado. CapRock is made by Lance Hanson at Jack Rabbit Hill in Hotchkiss, Colorado, a diversified biodynamic farm that also grows grapes and makes JRH Farm Wines and New Avalon Grower Ciders. CapRock Gin uses a blend of whole fresh or dried fruits, seeds, roots and flowers including lavender, pink rosebuds and citrus to create a unique flavor in its spirit while staying true to the traditional gin notes. The name CapRock is a reference to the water used in the spirits, which comes from a location twenty miles away from the distillery near the caprock formations on Grand Mesa. Jack Rabbit Hill is a diversified farm located in western Colorado’s North Fork Valley, near the town of Hotchkiss. Our 70-acre property grows 18 acres of grapes, sheep, and cattle. When it comes to making tasty products, we have our noses in the dirt as much as in the glass, because all great beverages start with clean growing practices! We started out in 2000 as a certified organic farm, and got into biodynamic farming in 2006.
We make JRH Farm Wines (vineyard-driven wines), WineTapistry (keg & box wines) , CapRock & Mell Vodka (craft and crafty spirits) and New Avalon Grower Ciders (single orchard ciders and perries) .
